CROCKPOT RECIPES – CHICKEN

This is a great selection of chicken crockpot recipes. 

Mexican Style Chicken Stew

This is a wonderful base recipe.  After you’ve made it once think about what alternations you can make such as adding corn or black beans.  Serve it with cornbread and your family won’t be able to get enough!

Ingredients:
2 lbs. boneless skinless chicken breasts cut into bite sized pieces
1 15 oz. jar of your favorite salsa
1 4 oz. of diced green chiles
1 1¼  oz. pack taco seasoning mix
1 8 oz. can tomato sauce

Add all the ingredients to slow cooker.  Stir until they are well combined. 

Cover and cook on low 7 – 9 hours.

Comfort Food Crockpot Chicken Casserole<

This rich, tasty chicken dish will warm you right down to your toes.  Perfect for cold winters’ days or any time your soul needs a little comfort food.

Ingredients:
3 cups diced cooked chicken
1/2 cup diced celery
1/2 cup diced green pepper
1/2 cup diced onion
1 4 oz can mushrooms
1 4 oz jar pimiento
1/2 cup parmesan cheese
1 1/2 cups cream style cottage cheese
1 cup grated sharp process cheese
1 can cream of chicken soup
1/2 cup chicken broth
2 Tbsp. melted butter
1/2 tsp. basil
8 oz. egg noodles

Combine all of the ingredients except the noodles in a mixing bowl.  Stir until well combined.  Grease the inside of your crockpot.  Pour the ingredients in and cook on low 6 – 8 hours. 

When the casserole is done, cook the noodles according to package recipe.  Drain and pour into your serving bowl.  Pour the casserole over the noodles and stir.  Serve.

Chicken Italiana

Simple and hearty, this recipe features tasty chicken pieces and a wonderful tomato sauce.  Perfect companion for some fava beans and a nice Chianti!

Ingredients:
Whole, cut up chicken
2 tbs olive oil
1 can (14-16oz) whole peeled tomatoes undrained and chopped
1/2 cups sliced pitted olives
1 clove garlic finely chopped
1 envelope beefy onion soup mix
1/4 cup dry red wine or water

Arrange the chicken in the crockpot.  Add the tomatoes, olives, and garlic.

In a separate bowl mix the olive oil, soup mix, and wine.  Mix well.  Pour the mixture over the chicken and cook on low 5 – 7 hours.

Merlot and Mushrooms Crockpot Chicken

If you can, use the fresh basil option in this recipe.  It’s tasty either way but there’s not substitute for the wonderful, minty taste of fresh basil.

Whole, cut up chicken, skinned
3 cups sliced fresh mushrooms
1 large onion, chopped
2 cloves garlic, minced
1 6 oz. can tomato paste
1 cup Merlot
2 tbs. quick-cooking tapioca
2 tbs. snipped fresh basil or 1 1/2 tsp. dried basil
2 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
Noodles
2 tbsp. finely shredded Parmesan cheese (I used the kind in a shaker)

Place the mushrooms, onion and garlic in the slow cooker.  Arrange the chicken pieces on top of the vegetables. 

In a bowl combine tomato paste, wine tapioca, sugar, salt, and pepper. Pour over the chicken.

Cook on low for 7 - 8 hours.  When it is done stir in the basil and turn off the crockpot.  Cook your noodles, drain and pour in serving dish. Pour sauce and vegetables over the noodles and arrange the chicken pieces on top.
